Grapes are hand harvested, crushed and very slowly pressed over 6 hours into 228L & 600L neutral barrels for spontaneous fermentation with pied de cuve and levage thereafter for 12 months prior to bottling unfined, coarsely filtered, minimal added SO2. 12% ABV
